Pairings for your Tsubaki Delivery

We wanted to share a few pairings to accompany your Tsubaki delivery. You can order them from our favorite wine shop, Domaine LA (HINT: order the pairings for delivery here!).

tofu salad | tomato kimchi, meiji tofu, shiso, little gem lettuces, lotus root chips

pair with: 2015 Julian Haart ‘1,000L’ Riesling
Fresh and crisp, spicy and sweet, all words to describe both the salad and the wine. Lightly off-dry German Riesling with just a smidge of sweetness is a summertime dream and does all the right things with quick “kimchi” fruit tomatoes and super creamy tofu.

gyoza  |  pan-fried pork dumplings, chili oil

pair with: Solarc Hoppy Citrus
Juicy little dumplings and a crisp beer. Need we say more?
Well, if we must, it’s brewed locally here in DTLA, made with neutral hops and their own home-grown grapefruits. It’s bright and refreshing and just absolutely built to pair with pillows of pan-fried goodness.

pair with: 2016 Jolie-Laide Pinot Gris
Sakura masu, also known as cherry trout or salmon trout, is a meaty, salmon-like fish. Grilled over Japanese charcoal until the skin is crispy but the interior is tender and medium rare, it pairs swimmingly (sorry for the pun!) with a wine with a bit of weight and texture. Jolie-Laide’s Pinot Gris is incredibly unique – with character and finesse unlike almost any other California expression of the grape – and is a true beauty with lovely fruit aromatics, tons of minerality, and a beautiful pale pink color to boot.

pair with: Laurence et Remi Dufaitre ‘Premises’ Beaujolais-Villages
Rich and savory pork belly in a ginger-spicy sauce is a total knockout with this juicy, red-fruited, minerally Gamay from Beaujolais. With heartier dishes, a light yet flavorful wine like this one keeps things fresh and bright and will have you going back for another bite…then another…
